Arbequina
Tracing the origin of this variety, Arbequina takes us to Spain, specifically to Lérida.
Given its hardiness, productivity and ability to adapt to different weathers, this variety allows for the production of an excellent olive oil, used in general for the “coupage” of olive oils.
When this oil is extracted from early harvests it has a greenish color and a fruity, almond flavor, that at the same time is bitter. Therefore, it is greatly sought after in high quality olive oil markets.
If the oil is obtained from ripe fruit, it tastes slightly fruity and sweet, and its color is yellow.
Oils obtained from Arbequina contain low levels of polyphenols, which reduces its stability over time.
